Micro Chop Salad with Sun Goddess Dressing
By request, I make this every year for Thanksgiving. It truly is an unforgettable salad. Everyone in the family gobbles it up. The dressing really does coat every little piece of this glorious, aesthetically pleasing salad. If you’ve never micro chopped your salad, you don’t know what you’re missing. It may take a few extra minutes but it is definitely worth it! The other beauty of this salad is that you can literally use any ingredients you have. Nuts would also be great in here.
The two things that make this salad so very epic are: (1) the BACON and (2) the DRESSING. It’s no secret bacon brings the flavor every time. Don’t get me wrong, this salad would still be bomb without the bacon. But one hundred percent, the factors that take this to next level status, are the meat and the sauce. SO delicious.
The dressing is comprised of quite a few ingredients but you most definitely already have them in your kitchen. Also, they all come together to form a sauce that will make you feel goddess like. Of course, I always recommend tasting your dressing or sauces to make sure the seasonings and consistency is to your preference. If you need to, add 1 more tablespoon of olive oil.

Linda! Was this comment necessary? We are rated HER recipe. Tsk tsk.
How long will dressing last in the fridge if I make extra for another day ?
No more than 3-4 days
95g of fat per serving? That’s not healthy.
Can’t stop making this !! Yum yum
Hi Belle, I feel you! Glad you are enjoying the salad!!
Hi can I make a few batches and keep inside my fridge? The dressing will be stored separately and kept inside the fridge.
Is this a main salad or a side salad?
Hi Vivian, its definitely a main at dinner or a side dish for a large party!
I want to try this but what can I substitute pomegranate for if it’s not in season
Hi! I would do dried cherries or dried cranberries instead of pomegranate!
I will definitely make this again as it was a hit at our gathering. The slightly spicy salad has the perfect blend of flavors which is only enhanced by the dressing. What little remained, was even delicious the day after.
Hi Trudy, so glad you enjoyed this salad at your gathering especially! Thanks for the kind rating too!

Hi wondering if anyone has made the dressing with avocado oil instead of olive oil??
I substitute avocado oil for olive oil all the time in recipes. This should be no different.
Looks delicious but is this 1037 calories per serving?
It looks great but is there a way for reducing the calories and still maintain the taste
