Micro Chop Salad with Sun Goddess Dressing
By request, I make this every year for Thanksgiving. It truly is an unforgettable salad. Everyone in the family gobbles it up. The dressing really does coat every little piece of this glorious, aesthetically pleasing salad. If you’ve never micro chopped your salad, you don’t know what you’re missing. It may take a few extra minutes but it is definitely worth it! The other beauty of this salad is that you can literally use any ingredients you have. Nuts would also be great in here.
The two things that make this salad so very epic are: (1) the BACON and (2) the DRESSING. It’s no secret bacon brings the flavor every time. Don’t get me wrong, this salad would still be bomb without the bacon. But one hundred percent, the factors that take this to next level status, are the meat and the sauce. SO delicious.
The dressing is comprised of quite a few ingredients but you most definitely already have them in your kitchen. Also, they all come together to form a sauce that will make you feel goddess like. Of course, I always recommend tasting your dressing or sauces to make sure the seasonings and consistency is to your preference. If you need to, add 1 more tablespoon of olive oil.
Micro Chop Salad with Goddess Dressing
Ingredients
Salad:
- 8 strips bacon, cooked + diced
- 2 heads romaine lettuce, chopped
- 1 large avocado, diced
- 1 large cucumber, diced
- 1 pomegranate
- 1 cup frozen corn, warmed through
- 1/4 head red cabbage, shredded +chop
- 1 large carrot, shredded
- 1/4 cup sesame seeds
- 1/4 cup sunflower seeds
- 1 tbs chili pepper flakes
Dressing:
- 1/4 cup mayonnaise
- 3 tbs olive oil
- 1-2 tbs yellow mustard
- 2 tbs maple syrup (or honey)
- 1/2 lemon, juiced
- 1 tbs apple cider vinegar
- 1/4 tsp salt
- 1/8 tsp black pepper
- 1 tbs fresh chives, chopped
Instructions
Dressing:
- Whisk together all of the ingredients until smooth – will take a minute or two. Taste and adjust the mustard, salt, pepper and oil (if necessary).
We loved the salad and dressing! The only thing I didn’t have was pomegranate seeds. Otherwise, I made it as written. Thanks for sharing!

Yes you can prep the salad before hand but the dressing must be kept separate and added only when you are ready to eat the salad. Enjoy!

I LOVE THIS SALAD AND DRESSING! The micro chopped veggies appealed to me right away! (I’m tired of trying to fit large pieces of greens in my mouth or chasing salad ingredients around on my plate….) The veggies had crunch and nutrition, yes! Additionally, I hate making dressings because i usually spend the little time I have finding, measuring, and adding the ingredients all to find out I don’t like it. This time I took a chance and WOW it was AMAZING. (I used honey and dijon). Thank you for a great recipe that will live in infamy in my household.

I made this today substituting the bacon for pepperoni which I toasted in the oven then sliced. the amount for the dressing was more than enough for the salad so I wrapped it and saved the rest (slightly less than half) in the fridge.
LOVE! I will never buy store made salad dressing again:) This is my go to salad and every time I make is for guests, there is requests for the recipe. I am so happy I discovered your site, you have turned me into a cook!

Wow……this was so delicious I ate way too much!!! That sun goddess dressing will now be one of my regular dressings! Pomegranates are out of season for me right now but next time I will add the pomegranate. Going to have this again for dinner tonight! So much wonderful crunch and the texture of the finely chopped veggies is so satisfying. I boiled corn and cut it off the cob and it added so much extra yum. Super yummy!!!

This salad is one of the best I have ever tasted. I have made it as the receipt states and also changed it according to my family’s preferences. The base of carrots, cucumbers, cabbage, and romaine with the dressing is amazing. I did not have chives for the dressing and while we love them, they were not missed. I chop, shred, and make the dressing and store for in the fridge and make fresh and delicious variations throughout the week. So good!
