Roasted Garlic Parmesan Cabbage Wedges
A low calorie, inexpensive and delicious way to serve your cabbage side dish.
This side dish is the ultimate cabbage side because its easy to prep and really delivers on that garlic parmesan flavor. We each had two and had leftovers to warm up for the next day!
The best aspect of the dish it that the cabbage caramelizes in the oven and the result is super yummy vegetables at your table. You can also sub in so many different marinades here like BBQ sauce, Pesto or soy sauce and honey.

Roasted Garlic Parmesan Cabbage Wedges
Ingredients
Garnish: fresh parsley, fresh grated parmesan, black pepper + lemon wedges
Instructions
- Preheat your oven to 400℉. Line a baking sheet with parchment paper.
- Stem then slice your cabbage head in half. Slice those halves in half and then again one more time those halves in half. You should have 8 equal size wedges.
- In a small bowl, whisk together the olive oil, garlic, seasonings and grated parm. Brush this mixture on all sides of the wedges. Roast for 20 minutes then flip the wedges. Roast for another 10-15 minutes or until golden brown at edges. Serve with lemon wedges and fresh parsley.

this was delicious! I did cook mine a little longer after the flip (prob 20 min) to get it nice and browned. Great way to use a head of cabbage and is definitely going in to my recipe rotation

after a full hour, they were still as hard as rocks. why do I do these things to myself? i knew they wouldnt soften. it became cabbage and noodles at 830 at night for my 3 young kids. I’m miserable because of it.

The mistakes that I made the 1st time: I used shredded parm instead of grated parm. It got overcooked and stuck to the parchment. The wedges were too thick. I used chili powder but didn’t use enough. I don’t use the flakes. Not enough oil, onion powder or garlic. WOW! So silly.
Tonight: I’ve cut the other half into thinner wedges. I’m using grated parm & will use the shredded as garnish. using plenty of everything. Also, green onions as garnish. This should be my complete dinner. (Not a vegetarian — just like cabbage).
Cleanup was so much easier that sauteed or stir fried. This is my new go-to cabbage dish.
Delicious! I used 4 cloves of garlic but they were pretty large so next time I may use just 2…
Also is the serving size for 1 of the wedges.. or wondering what is considered the serving size
