Cheesy Cabbage Steaks (Pizza + Mediterranean Style)
This simply put, changed my mind about cabbage forever. If you’ve been following us for a while, you know we love our veggie steak sides in this house and cabbage is no exception. This recipe and method brings out the flavor of the cabbage and you just want to keep eating.
I made it two ways as options for a yummy pizza situation and a more grown up Mediterranean style with pesto and feta. Both taste incredible but the pizza is my favorite only because I am a pizza fanatic.

Cheesy Cabbage Steaks (Pizza or Mediterranean Style)
Ingredients
Cabbage Steaks:
- 1 green cabbage
- 1/4 cup olive oil
- 1/4 cup grated parmesan cheese
- 1/2 tsp each garlic powder, onion powder, paprika, chili powder, Italian herb blend
- salt and pepper to taste
Optional Toppings:
- 1/4 cup marinara (or pesto)
- 1 cup shredded mozzarella
- 2 oz mini pepperonis (or feta cheese + baby peppers)
- dried oregano
- chili pepper flakes
Instructions
Cabbage:
- Preheat your oven to 425℉ and line your large rimmed baking sheet with parchment paper.
- DO NOT trim your cabbage stem/core – leave it intact. Slice your cabbage first in half, then into thick slices. You should end up with 6 or 7 slices/steaks.
- In a glass measure cup combine the olive oil, grated parm, spices listed and salt and pepper to taste. Brush this mixture on both sides of each cabbage piece and bake for 30 minutes or until golden.
Toppings:
- Top each steak with 1 tbs of either the marinara or pesto and spread out evenly with the back of your spoon. Sprinkle with mozzarella and top with pepperoni (or feta and min red peppers), dried oregano and chili pepper flakes. Pop back in the oven until cheese is melted – a few minutes.
I really enjoyed this recipe. I love pizza but not the calories. This was delicious and satisfying. Thanks again for another great recipe.

Pre-cooked the “steaks” last night. Added the marinara sauce and cheese tonight. Loved it. Refigerating the rest of the steaks for later this week. A great option for someone living alone, just add the topping (tomorrow I’ll try the pesto and peppers with cheese) and heat. It’s actually a full meal, veggie and protein. More of either can be added if needed. Thanks.

Super easy! Love how you can get really creative with these. Really filling and satisfying. Added a few more toppings such as roasted cherry tomatoes, kalamatas and thin sliced pesto chicken. Turned the oven off when they were done and let them sit until they were well done and the juices flowed. Everyone loved them. Will definitely make these again.

We used sauteed veggies (onions, peppers, mushrooms and garlic, and scrambled Italian sausage. Did not use pepperoni, sauce or pesto. It was very delicious.

yum, I made these tonight, I need to slice them thinner, I cooked them longer, my hubby put crushed pineapple on his, I added sliced green onions ! we both agree to make these again, next time I will add a fresh sliced olives also. keeper
yum ! we all enjoyed our healthy cabbage “pizza” was concerned that the cabbage would be under cooked-it wasn’t .I used a bit of browned chopped beef in the sauce instead of pepperoni.

If you choose the feta and min red peppers, do you still include the mozzarella? How much feta do you use?
Hi Donna, yes, the mozzarella is standard for both versions! The feta is 2 ounces!
